The other day Restaurant 1833 star sous chef Nicolai Grigorov laid out sashimi grade hamachi with a dash of cumin and the tiniest, most tender avocados I've seen (you could eat the skin). There were rich and earthy beet salads and a crispy hen egg wrapped in prosciutto, plus uncommon gnocchi, a lamb marguez pizza and zingy fried cauliflower that deserves an upgrade from side dish. These treats may be among the set menu 1833 aims to illuminate with the third annual showcase—or they may not, which is part of the saliva-inducing suspense at around 30 eateries countywide, including C Restaurant (pictured).
