The area has simply never seen anything like it. No, not the tableside absinthe service that sets the green fairy ablaze or the bacon-cheddar biscuits that never cease to amaze. Not the seven distinct spaces, from the apothecary-style bar with its glowing onyx surface to the gorgeous Gallatin’s room where select groups can order family-style indulgences like whole lobes of roasted foie gras or salt-crusted dorade (ordered 24 hours in advance). Not the spirits barrel-aged onsite, or the must-crack crispy hen egg or the unisex bathroom stalls, either. Most significantly, the area has never seen a place which pulls it all together so well that it earned a best-new-restaurant-in-the-country nomination from James Beard Foundation
