Harvesting the titles of best in town, easiest on the environment, best with the fish and best in all of Monterey County in one year?! It would seem an incomparable achievement—until you realize that’s it’s not all that different from getting a superlative scallop on an artichoke-risotto cake with caper-walnut-raisin relish, smoked bacon-butternut-squash chowder, zippy Alaskan halibut lightly crusted with tamarind, the continent’s most incredible crab-avocado salad and a range of rare but inspired wine tastes, all in one sitting, which happens, oh, about every night at Passionfish. Yes, the roast lamb with goat cheese sauce and the short rib-foie gras tortellini swimming in a buttered beef broth are incredible, but stick with the seafood, for no one does Arctic char or tender sturgeon with the magnetic creativity and ocean consciousness of Chef Ted Walter. And for good measure they won Best Wines By the Glass—see Around Town, p. 30—too.
