The Kouing-aman (“cake-butter” in Galic) is a specialty of Brittany where it was invented. It consists of a rich croissant dough, flaky and buttery, in which we incorporate a generous amount of sugar during the process of lamination (folding the butter into the dough and folding it over a couple of times). The result is a deliciously caramelized pastry that can be enjoyed any time of day.
