This dish has that healthy Mediterranean Diet feel to it. The potatoes are from the North Coast of California. The cherry tomatoes are in season and just burst with flavor. The octopus is cooked in court bouillon for three hours on a slow simmer. I always watch this one as the cooks want to boil it to cook it faster, but it needs to be simmered and cooked gently. I love to braise. Octopus is one of the few ocean species you can long braise because it starts out so tough. We then finish with a touch of lemon, salt and piment d’ Espelette.
