*Eggplant Mozzarella Casserole*
Our customers love our Eggplant Mozzarella Casserole, a variation from eggplant parmigiano. We make our own marinara sauce. We bake, rather than fry, the slices of eggplant, making them lighter and much easier to digest. We layer them with the marinara sauce, and use fresh mozzarella balls and fresh basil with olive oil.
