Craig Delaney was inspired by a local named Duke, who set up shop just past the 26th bridge on the road to Hana. Duke’s pork was the best, and his success came from one simple cooking rule: low heat for a long time. Duke finished his pork with an awesome homemade sauce that Craig has recreated as an original sauce for Hula’s, our soy glaze (citrus and pineapple juices, soy sauce, ginger, garlic, sake and molasses).
