This dish was inspired from days long ago when Francisco Mellado came to America in the late 1980s from Oaxaca, Mexico. Soon after, cooking became his passion. He realized then that using fresh and seasonal ingredients was the only way to cook. This dish includes olive oil, fresh tomatoes, onions, garlic, prawns, clams, mussels, salmon, crab, fish stock, white wine, tomato paste, fennel, red pepper flakes and parsley.
