With the menu changing completely every day of the week, there is no one signature—“It’s always changing, always evolving,” Chef Craig von Foerster says—but one of his calling cards is the abalone. He delicately crusts and flash sautées abalone steaks to preserve tenderness and sweet flavor before bathing them in a cherry tomato-basil brown butter using produce (pulled from Sierra Mar’s neighboring gardens) and drizzling a little aged balsamic on the plate around it.
