This 3-inch-thick, natural (no hormones, no antibiotics) Angus beef short rib is first browned to a deep caramel color and then very slowly braised with dark Guinness beer, tomatoes, carrots, sweet onions and herbs. It is served with its braising jus aloft a creamy pillow of polenta softened with mascarpone and parmigiano cheeses.
