Update: With the Saturday, May 20, reopening fiesta on the horizon, here's a peek at the menus and some fresh pictures.

Daily specials accompany the reopening, including BOGO wine flights Monday, $10 sliders Tuesday, half-off desserts Wednesday, trivia Thursday and Bloody Mary and mimosa bars Saturday and Sunday, plus consistent live music on weekends.

The Money Duo plays the 1-5pm reopening party.


The iconic Carmel Valley restaurant belongs to another era, in the best way. It will retain that old-school character, but its historic identity as a steakhouse will become a relic of Carmel Valley's past.

As of today, April 18, Will's Fargo Restaurant + Bar is closed.

Holman Ranch Tavern opens in its place Saturday, May 20, with new signage and a 1-5pm party with live music, local wines, craft beers, food tastings and the release of the new Jarman sparkling Rosé.

In a statement, owner-operators Hunter Lowder and Nick Elliot—who also own the destination property Holman Ranch and the wine label of the same name (and Jarman)—describe a new "multi-purpose space that will include a tasting room, patio and special events venue." 

They add that the adjustment will allow the property "to better align with our mission at Holman Ranch as well as the overall direction of Carmel Valley Village’s business culture."

"After careful consideration as to the best way to move our businesses forward we have decided on a strategy change," the statement reads. "Holman Ranch has been an industry leader in weddings and special events, as well as a renowned producer of wines and a popular site for wine tastings. 

"We want to take what we do best at Holman Ranch and turn a historic landmark into a guest experience that offers several culinary and tasting flights and will feature a robust event calendar for open to the public and private events."

There will still be a functioning kitchen; the food will revolve around small plates and pairings with wine, beer and spirits flights.

The full bar, in all its cowboy-style glory, will continue to serve drinks.

The current Holman Ranch tasting room (at 19 E. Carmel Valley Road, Suite C) will relocate (and is closing May 15). A new wine and curios shop will peddle Holman Ranch and Jarman estate wines, picnic supplies, gifts, wine, wedding and foodie goodies, and Carmel Valley keepsakes.

The overhaul means lunch will be available seven days a week.

Anticipated hours are noon-7pm daily.

Will's Fargo staffers held an unofficial wake for the long-running restaurant over dinner at Lokal Monday night.
